About the Author
François-Xavier Delmas, the founder of Palais des Thés is now acknowledged as one of the world greatest experts in the tea universe. A tireless globe-trotter, he has been scouting tea gardens around the world on his quest for the best teas for more than 30 years.
In 1999, anxious to pass on his expertise to as many people as possible, he founded L'École du Thé, a space for initiation and tea-tasting training. L'École du Thé has been awarding a tea sommelier diploma for professionals since 2016. The Tea School trains individuals as well as professionals chefs.
